Basketball and Buffalo Dip

One of the best things about growing up in Kentucky, is being a Kentucky Wildcat basketball fan. It’s in our blood and something we all look forward to every November. Looking in from the outside I’m sure we, as fans seem a little crazy but it’s the one thing all Kentuckians have in common.My husband and I are very fortunate to  have season tickets to the basketball games. These tickets are really hard to come so needless to say, we’ll probably keep them forever.

Saturday was one of the biggest games of the year, some of you might have seen it on T.V., Kentucky #1 vs. North Carolina #5. This is a big rivalry and was expected to be a great game. Well, it was just that, the greatest game I’ve ever seen in Rupp Arena. Kentucky came out on top winning 73-72. Here is a clip of some footage I took from the game, this might explain  our enthusiasm for the CATS.

One of the greatest things to do on the weekend is to sit with friends and enjoy a great game. I love entertaining and when we have friends over to watch the games on T.V. we always serve up our yummy buffalo dip. I highly recommend if you enjoy hanging out with the friends and watching sports, give this dip a try, I promise you won’t be disappointed.

Ingredients:

1 package of cream cheese (softened)

2 chicken breast

1 cup Frank’s buffalo sauce

1 12 oz. container of Blue cheese crumbles

1 large tomato

Directions:

Season chicken breast with salt and pepper and bake in the oven on 350 degrees until cooked thoroughly. In a pie pan spread the cream cheese to cover the bottom and sides of the pan. Once the chicken is cooked and cooled, shred the chicken and mix with the buffalo sauce in a medium size bowl. Place the chicken on top of the cream cheese. Cover with blue cheese crumbles and then bake on 350 for 20-25 minutes. Top with tomatoes before serving. Serve with Tostito chips or Triscuits.
